Gıda Endüstrisinde Dijital Tedarik Zincirinin Gelişim Çerçevesini Araştırmak ve Dijitalleşmenin Tedarik Zincirinin Sürdürülebilirliliğine Etkisi: Bursa İlinde Bir Uygulama

Abstract

Tedarik zinciri yönetimi, hammaddede temininden nihai ürünün tüketiciye teslim edilinceye kadar olan süreçlerin yönetimi olarak tanımlanmaktadır. Hızla yükselen küreselleşmenin ve yoğun rekabetin yaşandığı günümüz dünyasında, işletmeler tedarik zinciri yönetimi yaklaşımını uygulayarak, değişen rekabet şartlarında müşteri taleplerine uygun, esnek bir üretimi gerçekleştirebilmek ve tedarikçilerden son müşteriye kadar uzanan zinciri yönetmeyi başarmak durumundadırlar. İşletmeler bu faaliyetleri gerçekleştirirken hem kendi varlıklarını hem de parçası oldukları ekosistemlerin devamlılığını sağlamak zorundadırlar. Günümüzde, sürekli değişen ve gelişen teknoloji, bireyler ve işletmeler için birçok uygulamayı beraberinde getirmektedir. Ancak bu uygulamaları tedarik zinciri ve üretim süreci içerisine entegre etmek, ek maliyet oluşturabileceği gibi ek işgücü ihtiyacı da oluşturabilmektedir. Bu gibi nedenler teknolojiyi benimseme konusunda firmaların kararlarını etkileyebilmektedir. Bu bağlamda Endüstri 4.0 sürecinin bir parçası olan teknolojik gelişmeler ve dijitale geçiş entegrasyonu, lojistikte olduğu gibi tedarik zincirine de değer kazandırmıştır. Bu çalışmanın amacı, gıda endüstrisinde dijital tedarik zincirinin gelişim çerçevesi araştırmak ve dijitalleşmenin tedarik zincirinin sürdürülebilirliğine etkisinin incelenmesidir. Bu çalışmada nitel araştırma yöntemleri kullanılmıştır. Yapılan görüşmelerde derinlemesine görüşmelerden yararlanılmıştır. Derinlemesine görüşme yöntemi, görüşme sırasında hazırlanan soruların yanı sıra konunun içeriğine göre farklı sorular sormamıza olanak sağladı. Katılımcılara hazırlanan yarı yapılandırılmış görüşme formu ile ilgili sorular sorulmuştur. Çalışmanın sonucunda, yenilenebilir enerji kullanan işletme sayısının düşük olduğu tespit edilmiştir. İşletmelerin fabrika binaları ve çevresinde bulunan alanlarında güneş veya rüzgâr enerjisi sistemleri ile elektrik üretimi gibi yenilenebilir enerji sistemlerinden, atık su geri dönüşümü sistemleri gibi çevreci sistemlerden daha fazla istifade etmesi, ekonomik ve çevresel sürdürülebilirliğe doğrudan katkı sağlayacaktır. İşletmelerin yönetici ve çalışanlarının sürdürülebilir ekonomi, çevre ve toplum konularında, hizmet içi eğitim programları oluşturmaları veya bu konuda profesyonel anlamda destek almaları, işletmeler açısından faydalı görüleceği sonucuna varılmıştır.

Supply chain management is defined as the management of the processes from the supply of raw materials to the delivery of the final product to the consumer. In today's world where rapidly rising globalization and intense competition are experienced, businesses have to apply the supply chain management approach, to realize a flexible production in accordance with customer demands in changing competitive conditions and to manage the chain extending from the suppliers to the end customer. While carrying out these activities, businesses have to ensure the continuity of both their own existence and the ecosystems they are a part of. Today, constantly changing and developing technology brings many applications for individuals and businesses. However, integrating these applications into the supply chain and production process may create additional costs as well as create the need for additional labor. Such reasons may affect the decisions of companies in adopting technology. In this context, the integration of technological developments and digital transition, which is a part of the Industry 4.0 process, has added value to the supply chain as well as logistics. The aim of this study is to investigate the development framework of the digital supply chain in the food industry and to examine the effect of digitalization on the sustainability of the supply chain. Qualitative research methods were used in this study. In-depth interviews were used in the interviews. The in-depth interview method allowed us to ask different questions according to the content of the subject, as well as the questions prepared during the interview. Participants were asked questions about the semi-structured interview form prepared. As a result of the study, it has been determined that the number of enterprises using renewable energy is low. It will directly contribute to economic and environmental sustainability if businesses benefit more from renewable energy systems such as solar or wind energy systems and electricity generation, and from environmental systems such as waste water recycling systems in their factory buildings and their surrounding areas. It was concluded that the managers and employees of the enterprises should create in-service training programs on sustainable economy, environment and society or receive professional support in this regard, it would be beneficial for the enterprises.
