Abstract

The importance of fostering environmental awareness, ethical production, and sustainability alongside technical knowledge and practical skills in gastronomy education has been increasing. In this context, sustainable gastronomy offers a holistic approach that includes energy efficiency, waste reduction, the use of local products, and fair supply chains. This study examined students' perceptions of the concept of the 'green kitchen,' along with the symbols and cultural meanings it evokes in their minds. The research was conducted using a qualitative research method through in-depth individual interviews, and data were collected from 25 volunteer students from the 2nd, 3rd, and 4th grades of the Gastronomy Department at Beykoz University until data saturation was achieved. The obtained data were evaluated through thematic analysis, and the theme development processes were systematically analyzed. The findings revealed that students associate the concepts of sustainable gastronomy and green kitchen with environmental sensitivity and ethical production. Furthermore, it was observed that gastronomy students' perceptions of sustainability have a multilayered structure including environmental, ethical, and social dimensions; however, these perceptions do not always fully translate into practice. This situation indicates that sustainability education should not be limited to theoretical knowledge transfer alone, but should also be supported by practice-based approaches.
